This is another very traditional recipe which can be prepared in a jiffy, if you have specially prepared rice flour. You do not have to wait for Vinayagar Chaturthi to prepare this healthy and gluten free dessert. It can be made on any day as it serves as a healthy dessert or after-school snack for kids. In our last post, we saw salted version of pidi kozhukattai, today we will learn how to make sweet/vella pidi kozhukattai following this easy recipe with step wise pictures.

Sweet (vella) Pidi Kozhukattai Recipe

Prep Time : 5 mins(excluding rice flour preparation)

Cook Time : 15 mins
Yields: 6 Vella pidi kolukattais

Ingredients needed

Rice flour -1/2 cup
Jaggery-1/2 cup shaved
Grated coconut -1/4 cup
Cardamom powder -1/4 tsp
Ghee/clarified butter -1 tsp

Preparation


Dissolve jaggery in 1/2 cup+ 1 1/2 tbspof water over low heat. (The quantity of water will differ according to the quality of rice flour. It will vary from 1 – 1 1/2 cup of water for 1 cup of rice flour). Filter it to remove impurities.


Prepare rice flour as mentioned in my sweet kozhukattai recipe.

Method


Heat the jaggery water, when it starts boiling, add grated coconut and cardamom powder.


Then lower the heat and add rice flour with one hand and stir continuously with your other hand to prevent formation of lumps.


Once all the water has evaporated, add a tsp of ghee and cook stirring now and then over low flame for 5-6 minutes.


Transfer it to a plate. When it is warm, grease your fingers with a little ghee and make oval shapes out of the mixture. Keep it on your palm and press it to give the shape as seen in the picture below. Repeat the same process for the rest of the dough.


Steam cook for 10-15 minutes or until done.

      What is the confusion. I have given perfect measurements .I have added 1/2 cup of water and another 1 1/2 tbsp of water. That's all.

      I usually add 1 1/4 cup of water for 1 cup of rice flour. Since this recipe uses only 1/2 cup of rice flour, I have divided that 1 1/4 cup of water by 2 (which is 1/2 +1 1/2 tbsp). Hope I have made it clear.

    Hi i used 11/4 cup water fr 1cup rice flour but dough was not stiff and i couldnt shape kozhukattai reason please?

      As I have written in the very first paragraph under 'preparation' that the water measurement depends on the quality of rice flour. You could have cooked adding a little more rice flour.

    How to Know whether it is cooked or not?

    After steaming process it becomes soft or hard?

      Mostly it will get cooked within 15 minutes. You will see slight change in color.
