You’ve heard it a thousand times, breakfast is the most important meal of the day. “But I don’t have time for breakfast,” you think. So you grab a cup of coffee, maybe a breakfast bar or a piece of fruit on your way out the door, and an hour later you’re hungry.

Well, I want to challenge you to set your alarm 15 minutes earlier to make and eat an oatmeal pancake. With a mix of carbohydrates, protein and a little fat, this breakfast will keep you energized all morning.

This recipe is also perfect for kids to eat before school. They will be more alert and ready to learn with a tummy full of nutritious food. And it literally only takes 15 minutes to make and eat, then you can be out the door.

Oatmeal Pancake

A quick and easy breakfast that will keep you full all morning long!

Servings 1

Ingredients

  • 1 egg
  • 1/2 C. rolled oats I like Bob's Red Mill brand
  • 1/2 t. vanilla
  • 1/2 t. cinnamon
  • 1 T. natural peanut butter or almond butter
  • 1 t. maple syrup sometimes I use organic maple/agave blend from Trader Joe's

Instructions

  • Heat small pan or griddle over medium high heat.

  • Beat the egg, oats, vanilla and cinnamon in a small bowl.

  • Pour into pan, making sure it spreads out into pancake shape and cook for 2-3 minutes then flip and cook for 2 minutes more.

  • Serve with peanut butter or almond butter and maple syrup.

  • (Multiply ingredients based on how many pancakes you want to make-the above ingredients make one pancake).

    I made a version of these after we talked about them a couple weeks ago. I have been topping it with homemade blueberry jam! SOOO good! We eat it almost every day for breakfast. Bobby adds soy sausage patties for extra protein!

    Yes, I have made this with quick-cook oats. It works, but I don't enjoy the texture as much.

    Another thing with those: my little guy only likes crunchy stuff and he didn’t eat it fresh. So I toasted his in the toaster oven, let it cool, and he ate it as a cookie 🙂

    This is now my go to recipe when I need a filling breakfast! I put peanut butter and drizzle honey on mine and it is delicious! Just be careful not to smash it too much into a pancake shape. I did that on my first one and it was a little burned. =P

    How do they hold up after being frozen, and how would you suggest thawing/reheating?

      I’ve never tried freezing them, but I would assume you could heat them back up in the toaster. If you try it, let me know how it works out!

    Are you supposed to cook the oatmeal first? I made your recipe with old fashioned oats and it was very dry even with an extra large egg. It tasted great though. So I was just wondering about cooked, partially cooked or dry oatmeal?? Thanks.

      These pancakes are definitely dry, not moist like typical pancakes. You are supposed to use uncooked oats, but if it’s too dry for your taste, try using a little less oats. Hope that helps!

    We made these for breakfast on Sunday morning and we really enjoyed them. They definitely kept us full until lunch! I also froze a few and I reheated one this morning (30 seconds in the microwave and then a cycle in the toaster) and it was really good. I added honey and peanut butter to mine, while the kiddos used homemade chocolate syrup. I think they only think I may do differently is possibly add some honey to the batter next time for a little sweetness. Thank you for posting the recipe! We will be making a triple batch this weekend so we have them for a quick weekday breakfast.

      Hi Hope! These pancakes by nature aren’t the “light and fluffy” pancakes you might be used to. They are pretty dense! You might try adding a little less oats next time and see if that helps.

      Hi Nicole, the egg and oats add up to around 220 calories. Nut butter and syrup are optional and would add around 120 extra calories (based on measurements in the recipe).
